Ripe pear, green apple and a back note of spice are the aromatic introduction to this clean, well structured Chardonnay. On the palate, green apple flirts with orange blossom and wet stone as spice from the french oak lingers throughout. The rich mid palate carries fruit flavors through to a long finish.
Harvested at night to minimize oxidation of the fruit, Natalie kept the Chardonnay lots separate. The fruit was gently pressed and put into french oak barrels for fermentation where it was stirred on its lees every other week, and once a month during aging. Thirty percent of the Chardonnay went through malolactic fermentation, which contributed to its creamy texture on the palate.
