Susan Foppiano shares with us a hearty dish that hits the spot during the winter months. When it's called Mom's Lasagna, you know it's going to be comfort food! |
6 T butter (2)
1 carrot shredder
1 clove garlic, mashed
1 large onion, finally chopped
2 # lean ground beef
4 med tomatoes peeled and chopped
a can tomato past
1 tsp salt
1 tsp pepper
1 tsp basil
½ tsp sugar and oregano
½ cup dry white wine
Cream Sauce
4 t butter from the 6 above
6 T flour
Dash each pepper, nutmeg,
3 c milk
1 ½ c grated cheese
Meat Sauce
Heat 2 T butter in large frying pan. Cook carrot,garlic and onion until soft but not brown. Add ground beef. Cook, stir frequently
Add tomatoes, tomato paste, spices and wine. Bring to a boil, reduce heat, cover , simmer 1 hr, uncover and cook 30 min longer until sauce is thick. Skim off fat.
Meanwhile cook lasagna. Drain and rinse in cold water. Separate noodles
Cream Sauce
In a 2 qt saucepan, melt 4T butter. Add flour, salt, pepper and nutmeg.. Gradually add milk stirring constantly. Cook until thickened then cook 2 min longer. Stir in half the cheese.
Arrange about 1/3 lasagna in a buttered 9x13 pan. Spread 1/3 meat sauce, then 1/3 cream sauce. Add two more layers, finishing with cream sauce . Top with remaining cheese.
Bake at 350 for 30 min.
