Susan Foppiano shares with us a hearty dish that hits the spot for March. Have fun with Susan's Nutty Barley Pilaf! |
Place barley in medium saucepan; cook over medium heat, stirring frequently, for 5 minutes or until toasted.
Add both and seasoning and bring to boil. Reduce heat and simmer covered for 25 minutes.
Meanwhile, heat oil and butter in large skillet.. Add onion and cook for 20 minutes over low heat. Stirring frequently. Add chard and bell pepper and cook for 5 minutes until heated through.
Stir in barley, cook for 5 minutes more. Stir in pecans and thyme.
Makes 4-6 servings
